Purovōku Project

Nature to Glass

Zero waste—one of the core pillars of our philosophy. Our coasters and menus are made from recyclable paper, and our premium cocktail list changes frequently to minimize waste. By reducing the use of fresh fruits and vegetables and ensuring all paper is 100% recyclable, we take on the challenge of sustainability. For you, it’s an opportunity to indulge guilt-free, knowing you’re supporting a more sustainable world. The challenge grew even greater when we decided to create our own resources. On the rooftop of our building, we established an autonomous greenhouse where we cultivate our own produce, including basil, thyme, oregano, arborvitae, tomatoes, strawberries, and peppers. Our ultimate goal is to build a vibrant community around Purovoku, centered on small producers. Sourcing fruits, vegetables, and seasonal produce directly from them, we not only foster relationships but also ensure access to high-quality ingredients at a lower cost. This direct collaboration strengthens our commitment to sustainability and supports local agriculture.
